Twelve Whisky d'Aubrac Basalte is the first single malt from the Laguiole distillery, and above all the most emblematic of its terroir. This batch BA-03-21 is the second batch from the fledgling distillery.
Aged for 3 years in barrels of port, rum, red wine, calvados and new oak, it then benefits from a very slow reduction. Unfiltered and gravity-fed, its color is natural.
Nico's tasting notes
The nose greets us with a warm, rustic generosity that takes us on a stroll between the barley fields and the farm. Indeed, a certain organic character emanates from this whisky at first, like a kind of gently spicy wetness.
Aeration sheds light on the different casks this liquid has passed through, revealing notes of concentrated red fruits and tannins. The somewhat farmy feel of the debut gives way to a bright, spicy profile, underscored by bitter citrus zest.
The palate offers a fresh attack, embodied by a juicy pear so bursting with sunshine that it displays hints of green banana. Next, an apple grabs our taste buds, with an astringent side encouraged by tannins, which themselves move towards a more mellow, pastry-like woodiness with sweet almond notes.
The finish is more roasted, with softly roasted nuts.
