Tasting notes from Thomas
The nose shows great density. The peat is very light indeed, bringing hints of smoked wood and lightly farmed butter. The cereals are imbued with it, accompanied by a little chocolate mousse, butter and nuts. The advance is subtle and always balanced. A relatively discreet touch of spice (nutmeg) enhances the whole, while a hint of minerality and malt come to the fore.
Aeration brings together cereals, chocolate, nuts and spices around a peat that's enriched by a little mint.
The palate is silky and not overpowering. The balance palpable on the nose is mirrored on the palate. Light, refreshing peat combines with dark chocolate, smoked cereals and walnuts. While the entry is very sweet, it quickly switches to something slightly drier: cinnamon, licorice, nutmeg and a hint of minerality. However, the balance remains interesting, with chocolate and dried fruit providing the sweetness.
The finish is more minimalist, but ends the tasting with peace and quiet. The roundness of the chocolate cream blends with a slightly mineral, mentholated peat. Walnut and nutmeg remain on the palate.
