The white rum made from pure Cambodian cane juice comes in this "Wild" version.
Its construction is almost the same as for the 42° and 55° versions. During the fermentation stage, there is no addition of yeast. This is a fermentation with spontaneous yeasts, also called wild yeasts.
These are found on freshly pressed canes.
