The white rum made from pure Cambodian cane juice comes in this "Wild" version.
It is produced in much the same way as the 42° and 55° versions. During the fermentation stage, no yeast is added. It is fermented with spontaneous yeasts, also known as wild yeasts.
These are found on freshly pressed cane.
