Produced at the Saint James distillery, Bally rum is the object of very special attention. Quantities marketed are much smaller than those for Saint James rum.

Nico's tasting notes
The nose is very lively, and the cane grabs us without further delay. It's bright, very herbal and, of course, very sweet. Its fiber is as candied as its bark is solid and spicy. The rum unfurls almost woody aromas of bagasse and straw, which soon melt into cane sugar.
Aeration and rest bring a certain roundness to this rhum agricole, which even takes on an air of milk chocolate at times. It now offers a more humid, thicker atmosphere, where the vesou shows the deepest notes of its fermentation.
On the palate, the rum is both sweet and powerful, with a round texture sprinkled with ground pepper. Concentrated cane juice sticks to the palate and spreads out quite suavely, then fermentation notes arrive in a fat, warm puff.
The finish is very round, leaving the impression of a gourmet, almost syrupy rum.
