Barcelo Signio is a double-aged rum from the Dominican Republic. It is a light molasses rum, distilled in columns. It was first aged in American oak barrels that had previously contained bourbon. Then, after this initial aging period, it was "transferred" to French oak barrels to perfect its maturation and aromatic profile.
Nico's tasting notes
The nose opens with a light rum, covered with a film of nuts that catches the nostrils. We encounter hazelnuts, walnuts and even peanuts, all of which have been roasted over a flame.
With aeration, the roasting now brings us gourmandise and more thickness. We unwrap a bar of dark chocolate with pecan and coffee chips.
The palate is more gourmet than you'd expect, as the roasting is neither harsh nor dry. On the contrary, we enjoy a round, gourmand attack, rich with butterscotch. The mid-palate continues in this rather sweet vein, with a light fruit syrup.
The finish returns to more roasted notes, but as round as ever. The coffee ends up stuck in our caramel, which sticks to our lips.
