Bielle Vieux 3 ans is an agricultural rum from Marie-Galante, a small and very authentic island off the coast of Guadeloupe. This pure cane juice rum is the signature of the Bielle house. A slow fermentation, a distillation in a Creole column, then an ageing in bourbon barrels. Behind this apparent simplicity lies a multitude of gestures, and above all an exceptional terroir, for a rum with a unique profile.
Nico's tasting note
The nose develops a good deal of citrus fruit (lime, yellow lemon, blood orange, etc.), which mingles with a fresh and vegetal cane. The oak brings nuances of beeswax, as well as a fusion of sweet spices.
With aeration, the fruit is retained while the deeper notes are removed. The result is a fairly light, fresh, almost floral rum with some sparkling spices.
On the palate, the aromatic profile immediately evolves towards what we know of Bielle: a very ripe cane with a soft woody patina and a concentration of sweet yellow fruits. The sweet spices introduce an even more gourmand and mellow side, which leads us towards a pastry character.
The finish is finely peppery, returning to a relatively light profile.
