Bologne Grande Savanne Bio is Guadeloupe's first organic rum. It comes from the Grande Savanne parcel, a 7-hectare plot of land located on the volcanic terroir of La Soufrière. On this plot of dry, sunny land, Bologne grows yellow cane according to the principles of sustainable, environmentally-friendly agriculture.
This agricultural rum is therefore plot-based and single-varietal. Distilled in a Creole column, it has not been aged and has been bottled at high proof to preserve all its aromatic qualities.
Nico's tasting notes
The nose opens with sweet, ripe cane, which lays its velvety, herbaceous notes on a sort of soft nougat. The fiber of the cane seems very tender, gorged with sugar; it offers a candied sensation, just awakened by a splash of citrus.
With aeration, we touch a little more on the root of the cane, with a slight earthiness, but above all with notes of sweet and sour fermentation, typical of a well-sweetened vesou. The cane then develops a lovely fruity roundness, and returns to its ripe, tender character, now perfumed with pineapple juice.
On the palate, it's beautifully rounded, velvety and silky, served by a good whiff of ripe cane. Sugar-swollen citrus fruits join in the celebrations, abundantly perfuming the rum with their sweet, tangy and slightly bitter flavors. The rum is clear, bright and delicious all at once.
The finish is very slightly peppery, with hints of fermentation and cane sugar.
