The world of mezcal is full of different traditions. Pechuga mezcal is a centuries-old tradition of mezcaleros. It is usually produced in small batches for the end-of-year celebrations. When distilling this mezcal, an animal carcass, fruits and spices are added to the still.
Bozal Pechuga mezcal is produced from the Papalote agave variety. Its distillation is carried out in traditional copper stills. Before the third and final distillation, a chicken is marinated with local fruits, chili peppers, citrus fruits, raisins, cinnamon and cloves. It is added to the still for distillation. This recipe is a family tradition that has remained unchanged for 4 generations.
