Brewdog Distilling Five Hundred Cuts Cherry & Dark Chocolate is a spicy spirit drink made from Caribbean molasses. It is produced by Scottish distillery Brewdog, inaugurated in 2016 in Aberdeenshire by Brewdog James Watt and Martin Dickie.
The molasses is fermented for 7 days with wine yeast, then distilled in the two copper pot stills. The first part of the rum is used as a base for macerating tonka beans and spices, while the other is distilled again with orange zest, green cardamom, Sichuan pepper and cloves.
The rums are then blended and enhanced with a little muscovado sugar, up to 8 grams per liter. Finally, a maceration of cherries and cocoa beans is added.
