This Cane Island bottled rum was pot still distilled in Australia by Beenleigh.
It has been aged in the distillery's tropical climate, in American white oak barrels, for 4 years.
Nico's tasting notes
The nose is initially dominated by a very sweet, slightly acidic, almost lemony fruitiness. Some sweet red fruit leads us towards a kind of rosewater grenadine. Gradually, a slightly green woodiness unfolds, with some vegetal accents.
Aeration confirms the greedy fruitiness of this rum, with a candied side now taking over. The vegetal notes are velvety smooth, and the wood shavings are as if coated in honey.
The palate is very smooth, with a light, fluid texture. The rum is nonetheless quite complex, and goes through several rather puzzling phases. First, some plump red fruits take on the form of marshmallows, before being completely melted by a decisive pepper. Wood takes over. Slightly roasted, it's as if coated in a sweet, vegetal patina.
The finish adds a further touch of varnish, this time with the taste of grenadine.
