Cañero 12 Sauternes Finish has been crafted in the Dominican Republic's long-established rum-making tradition. This light rum is distilled from molasses. It is aged in ex-bourbon casks arranged in solera.

The oldest rum in this blend was aged for 12 years, and the whole was finished for 9 months in old Sauternes Grand Cru Classé barrels (Château d'Arche).

This is the same rum as the Summum Finition Sauternes, but with a new name.

Nico's tasting notes

The first nose of this rum is powerful and marked by alcohol. But this alcohol soon changes to light floral notes that swirl on the surface. A big wave of vanilla washes it all away, giving an impression of candy or sugar candy. The sweetness continues with milk chocolate and barbapapa-style caramelized sugar. The fruit is velvety, like a pineapple or raspberry nectar. All these notes are quite delicate, with no heaviness or overpowering aroma. The caramel is just like that, just blond. There's also a damp air that appears in dashes from the start, like the smell of wet soil after rain.

Aeration doesn't erase the powerful character, but the flowers become more heady. The humid air becomes more evident each time you put your nose to the glass. It gives way to creamy vanilla and pistachio, before the resolutely sweet side reasserts itself with milk jam and baked apple with vanilla candy sugar.

The palate is just as sweet as the nose. Vanilla and grenadine offer a syrupy sensation, while strawberries and other red fruits stand out. The rum then enters a spicy phase, with tasty ginger, nutmeg and pepper. The notes that follow are more classic, with caramel, coffee and candied orange zest. The sensation on the palate is still liquorish.

The finish fixes the rum on this orange liqueur, and then we visualize a powdery cinnamon stick in the final moments.

    Even if the rum is certainly enhanced by flavor enhancers and caramelized, we still enjoy every glass with happiness and delight.
