Compagnie des Indes Indonésie 8 ans is a molasses rum, or rather a variation on one of rum's oldest ancestors: batavia arrack. This cane spirit has a special feature when it comes to starting fermentation. It is fermented not with oenological or baker's yeast, but with red rice. The molasses is then column-distilled to produce a singular, aromatic rum.
In this case, distillation took place in February 2013, followed by barrel aging until September 2021. This single cask for distributor Diva Domaines et Distilleries was bottled in 417 units.
