In 2019, the Martinique rum brand Dillon is making a name for itself with the release of bottlings that stand out from what we're used to: a single cask, and this brut de colonne!

Distilled in a Creole column and bottled without the addition of spring water, this white rum is 71.3° and offers exceptional aromatic concentration.

Nico's tasting notes

On the nose, the expected power immediately gives way to mellow, gourmet notes that are also very rustic and authentic. The cane juice is thick, cloudy and full of sugar, in full fermentation and developing organic, farmy notes.

With aeration, there's still no trace of alcohol, but the aromas are even more farmhouse and profound. The cane is candied to the extreme, with a completely melted pepper on an equally melted straw. The lime is far too ripe, its juice reduced to a thick concentrate.

On the palate, just a few drops are enough to express this eminently candied cane, this snapshot of terroir, whole and uncompromising. The cane stick is incandescent, its boiling juice overflowing onto its cooked, vegetal bark. The notes of fermentation are not as prominent as on the nose, they just underline the rum and counter boredom at all costs.

The finish is more organic, the pepper bathed in a sweet-and-sour vesuvius that smells of the distillation campaign.
