The “Distillery Collection” series marketed in fall 2017 presents rums produced in a different way from other Diplomatico brand rums. This No. 2 is distilled entirely in the Barbet column, named after the creator of this type of continuous distillation still, Émile Barbet.
The rum is then aged in American white oak barrels for 4 years.
Each bottle is individually numbered.
Nico's tasting notes
In brief: fairly dry - peanut - woody - honey - vanilla
The nose is rather dry at first, and will need a little opening to see the caramelized woodiness relax a little. It then delivers aromas of oily nuts such as peanuts, vanilla and tobacco. Now that the woodiness is relaxed, we can see that it has been worked gently, and is rather melted and honeyed.
Aeration releases the alcohol and dry caramelized wood notes. We then return to full-bodied nuts and a more appealing, fairly concentrated woodiness, as well as a rather classic, sweet profile.
On the palate, the rum is smooth and light. Flavors of vanilla and tobacco are followed by sharper notes of wood and dark cocoa. The register is now darker and drier, with a salivating astringency that produces a licorice-like juice.
The finish chooses to go further into roasted and caramelized nuts, the fatty peanut having been replaced by a drier but also more elegant walnut.
