The "Distillery Collection" series, launched in autumn 2017, presents rums produced in a different way from the other rums of the Diplomatico brand. This No. 2 is distilled entirely in Barbet columns, named after the creator of this type of continuous distillation still, Émile Barbet.
The rum is then aged in American white oak barrels for 4 years.
Each bottle is individually numbered.
Nico's tasting note
In short: fairly dry - peanut - woody - honey - vanilla
The nose is rather dry at the beginning and will require a little opening to see the caramelised woodiness relax a little. It will then deliver aromas of fatty nuts such as peanuts or vanilla and tobacco. Now that the wood is relaxed, we can see that it has been worked gently, it is rather melted and honeyed.
Aeration will finish by releasing the alcohol and dry caramelised woody notes. We then come back to the fatty nuts and a more pleasant and fairly concentrated woodiness, as well as a rather classic and sweet profile.
On the palate, the rum is smooth and light. It offers flavours of vanilla, tobacco, then sharper notes of wood and dark cocoa. The register is now darker and drier, with a salivating astringency that produces a liquorice juice.
The finish chooses to go further into roasted and caramelised nuts, the fatty peanut having been replaced by a drier but also more elegant nut.
