Doorly's XO is a rum made from several blended spirits that are then aged in American oak barrels for between 5 and 8 years. Once this initial ageing is complete, the blend matures for a further two years in old Oroloso sherry casks.
Its label is adorned with the Hyacinth Macaw. This rare variety of parrot is distinguished by its striking blue colour and can grow up to 1 m in length.

Its colour is between gold and amber.
On the nose, it's not easy. At first, the influence of the cask is felt with its vanilla, coconut and woody accents. But then other aromas make their appearance: chocolate and a discreet olive. The whole is greedy and relatively complex.
In the mouth, the attack is supple but quickly becomes dry. The alcohol is well integrated. We find wood, vanilla and this roasted note.
The finish is long and dry. The same aromas as on the palate remain for a long time: wood, cocoa and vanilla.

Very good bottle in the rum spirit. I prefer the 12 year old which is slightly more expensive. But very affordable in price and tasting
