El Destilado is an independent bottler. His first love? Agave brandies. Mexico was the ideal destination for this start-up. El Destilado soon discovered that, while agave is king in Mexico, rum is also produced there.

It was in the mountainous region of Oaxaca that El Destilado met the Krassel family and discovered their rum production.

In the village of Santa Maria Tlalixtac, the Krassel family produces a white rum from pure cane juice. The rum is distilled in a "home-made" alembic, created by the family's eldest son, Rommel Krassel. The still is made of steel. It's a column with 8 plates. This unique piece is a well-kept secret. You won't find any photos of this UFO of distillation.

On the production side, fermentation is spontaneous and takes place in stainless steel vats in the open air for 5 days. Once distilled in the famous alembic, the rum is bottled unfiltered.

Nico's tasting notes

The nose opens with fairly fresh, dry cane, in a register similar to that of West Indian agricultural rums. Floral notes and a hint of iodine mark a certain lightness, soon contradicted by increasingly organic aromas.

Aeration reveals a more rustic, slightly smoky profile, with all the characteristics of a wild cane eau-de-vie. Olive brine, earthiness, truffles, powerful aromatics and concentrated cane.

The palate is rather soft, with a surprisingly slightly acidic attack. Vegetal notes take over, with powerful, almost resinous herbs and spices. The cane is still very concentrated, with pepper and salty accents. Its juice seems to cook as it goes along, offering us a few licorice nuances.

The finish is relatively dry and spicy, with notes of steamed vegetables and olives that linger on the palate for a long time.
