Ferroni La Dame Jeanne 12 Guyane is an agricultural rum from the Saint-Maurice distillery in French Guiana. The pure fermented cane juice was first distilled in a Creole column in Saint-Laurent-Du-Maroni. Then it traveled to Aubagne in France, where Guillaume Ferroni gave it a few scissor blows. This second distillation took place in a pot-still, which allows good control of the distiller, and Guillaume wanted to bring out the fruitiest notes of this beautiful sugarcane eau-de-vie.
Nico's tasting notes
The nose shows a lovely green cane, vegetal and fresh, but also mature enough to offer a certain comfort, a certain roundness. Fruity aromas take flight in light, ethereal notes, with a hint of acidity.
With aeration, the cane loses a little more of its bark and pepper. It also melts more, and regains its fermenting juice, both powerful and sweet.
The palate is powerful yet balanced, with a peppery yet round cane. Its robust fiber invades the palate, accompanied by a surprising metallic touch in the mid-palate. Its sweet juice then spills out abundantly, tinged with candied lime and strong spices, all balanced once again.
The finish is still 100% focused on cane juice, and returns to fermented vesou.
