Ferroni La Dame Jeanne N°17 is a grand aroma type molasses rum which comes from Reunion Island.
Selected by Guillaume Ferroni, this rum underwent a long period of fermentation before being distilled in a Savalle column. It was then rested in an open Dame-Jeanne before being bottled.
Nico's tasting notes
On the nose, a typically Reunionese aromatic bomb explodes in our faces, with a blend of green olives in brine, red fruits in sorbet and overripe exotic fruits with tangy contours.
Aeration adds sweetness, even a touch of sweetness, like overripe exotic fruit whose flesh becomes milky and slightly acidic. The creamy curd is spiked with pepper and inhabited by green olives, for a devilishly tropical and bewitching profile.
The palate is powerful and enveloping, the rum crashing onto the taste buds with unsuspected roundness. Less extreme than the nose might suggest, it's almost sweet, full of exotic fruit with a fermented edge. The molasses is there, round and licorice-like, enriched with resinous aromas like rosemary, or like a juniper berry bursting with sugar.
The finish is very long and slightly smoky. The black olive has replaced the green, in an olive oil tapenade that is both sweet and bitter.
