In brief: wood - pastry - sweet spices - roasting
The nose opens with a sweet, woody rum. Its slightly pastry-like spiciness flirts with the world of spiced rums. The ex-Bourbon casks express themselves in all their typicality, having been heavily toasted, their white wood releasing many vanilla aromas. The caramelization is teeming with fine spices, with cinnamon in the lead.
The spices move up another notch with aeration, and cinnamon definitely asserts itself as the leader. White wood and vanilla achieve a fine balance, the profile as typical as ever of the casks used. Nuts add to the powdery side, a kind of synthesis between wood grain and spices.
The attack on the palate is soft and immediately marked by toasted white wood. The vanilla fiber of the oak is clearly apparent, both in flavor and texture. The spices rise to the nose with a roasted edge, and once again the toastiness of the wood takes effect. The pastry-like quality of these spices goes hand in hand with a certain sweetness that combines with cane sugar confectionery.
The finish is pleasant and quite long, extending this simple pleasure with licorice, maple syrup and honey. A hint of walnut lingers in the finish.
