New Grove Double Cask Acacia was first matured in French oak for 7 years before finishing its ageing period, for a further year, in an Acacia cask.
Please note that no cold filtration has been carried out to preserve the authenticity of this rum, which is why a small amount of perfectly natural, edible deposit can be found at the bottom of the bottle.
This rum offers very fresh aromas thanks to its original finish.
Laurent's tasting notes
Its color is an intense, brilliant amber.
On the nose, the aromas are powerful and there's a lot going on. Pepper is strikingly present, and a general vegetal impression emerges. Prune and cooked caramel, supported by a hint of bitter almond, are also present. Finally, wood takes pride of place.
On the palate, the woodiness is there. Prune and pepper are the main markers, though less intense than on the nose, and molasses appears.
The finish is long and very woody (almost tannic). The pepper - a real red thread - is still present. There's also cherry pit and a slight bitterness.
