Saint Aubin 1819 Classic Épicé is a pure cane juice rum distilled in the copper column still of the estate's rum distillery. The latter is located in the south of Mauritius. Spices (cinnamon, orange peel...) are then macerated in this agricultural rum.
While this spice-infused rum is an excellent base for cocktails, it can also be served neat, very chilled over ice.
Nico's tasting note
The nose is a real gingerbread and inevitably evokes Christmas mulled wine. Cinnamon, nutmeg and cardamom float in an orange rum, with a little sugar and vanilla to sweeten it up. A little peppery air balances the sweetness.
The palate is very smooth but manages to retain the freshness of the spices. The citrus peel brings both bitterness and fruity flavours. The balance is thus well found, and the power is well regulated.
