Santero 7 ans is a blend of rums aged at least 7 years in American oak barrels.
Nico's tasting notes
In brief: sweet - menthol - melted, caramelized wood - heavy - raisins
On the nose, the profile is both vegetal and very sweet, like a sweet herbal tea. The strong menthol notes are almost reminiscent of chlorophyll chewing gum. Small berries of red fruit are caught in the vanilla, then the rum develops a slight heaviness of very ripe exotic fruit in the background. The woodiness is rather familiar, gently peppery and caramelized.
Aeration confirms this sweet tendency, with the sensation of a succession of syrups (grenadine, mint, violet...). Slightly acidic citrus fruits and a few flowers fly over the glass, blown by a few ethereal vapors. Finally, the slightly spicy roundness of autumn honey returns to tempt gourmands.
On the palate, the rum is sweet and vanilla-flavored. A few mild spices announce a singular liqueur of wood and nuts. What's special about this liqueur is that it offers a melting sensation of caramel, soy sauce and moist woodiness. The caramel is also a little tart, a rather original and confusing profile. The flavor of a slightly oxidized prune underlines this strange parenthesis.
The finish is greedy and savory, with striking, pastry-like notes of rum-soaked grapes.
"Somewhere between sweet candy and highly aromatic rum, tasting this rum offers a confusing experience..."
