This rum, bottled by Valinch & Mallet, is a limited edition for France.
This is a 1994 vintage rum from the New Yarmouth distillery. It is column-distilled from molasses. It was aged for 27 years in a single oak barrel bearing the number 435079.
This rum was bottled in 2021 without reduction, at its natural strength. 84 bottles were produced for this special selection.
Nico's tasting notes
The nose is driven by generous, opulent toffee, full of butterscotch and vanilla, encrusted with toasted, caramelized nuts. The American oak expresses itself with great thickness and fullness, its strongly toasted side slowly melting away to concentrate in gourmandise.
With aeration, the rum retains the impression of spreadable pastry, nougatine and praline, still warm from its copper pot. A few fruity scents follow, as if a few peaches and apricots had been placed on a hot oak barrel.
The palate is highly concentrated and woody, with massive oak and prominent grain and tannins, yet shows unsuspected mellowness and tenderness on contact with the palate. Our rum/spread is always garnished with roasted, caramelized nuts, reduced to a fatty powder bound with molasses. The concentration is superb, as is the gourmandise.
The finish is very tasty, gently spicy, vanilla, caramelized, with the bitterness of a well-roasted coffee in the length.
