2024 marks the arrival of the third opus of Vieux Sajous 5 years.
This old clairin comes from the 2019 vintage. It comes from the Chelo distillery located in northern Haiti. Michel Sajous cultivates a single variety of cane on a 30-hectare plot located around his distillery. This is the variety called “Cristalline”.
Distillation is done in a still heated over a wood fire after a natural fermentation of five to eight days. For this, he uses indigenous yeasts.
This edition is the result of a blend of several casks. These have previously contained Hampden, Mount Gay, Bielle, Caroni rums, whisky from the Benriach distillery and bourbon.
The aging took place in Haiti in the cellars of the Port-au-Prince Distillery.
