Professor Cornelius Ampleforth Rumbullion! is a blend of rums from different Caribbean regions.

Just like its reduced version, this “spiced” rum is made from vanilla, orange zest and spices (cinnamon, cardamom, cloves). Its significantly less reduction, to 57° instead of 42.6°, gives it additional power.

57° is the percentage of alcohol at which gunpowder soaked in rum continues to burn: not to be put in everyone's hands, or rather in everyone's throats...

Nico's tasting notes

This is a nose that really hits the spot! The spices explode: cinnamon, cardamom, nutmeg... They are underscored by candied orange peel, which adds a fresh, tangy edge. The spices are supported by this freshness, and the rum is not heavy thanks to its high alcohol content. The bevy of exotic peppers and clove essences lend an almost medicinal quality, like an ancient apothecary's recipe. One might also think of a herbal tea, an infusion of herbs and spices, sweetened version. If the rum is left to settle for a few moments, it reveals fruitier notes, more candy-like, with banana.
Aeration brings out more woodiness, or more precisely, bark. The spices are increasingly black, with clove taking center stage. Black is black, and now there's a hint of coffee and licorice. Then dried fruit and pepper cola add a little light and fantasy.

The attack on the palate is both powerful and very sweet. These two aspects telescope: on the one hand, the liveliness and freshness of a high-proof rum, and on the other, the roundness and smoothness of cane syrup. As on the nose, the combination of spices, a hint of herbs and sugar is reminiscent of pepper cola.

The finish leaves the palate quite dry in the end, with a lingering orange peel fragrance.

    I love the spiciness, unlike others! the 57 degrees makes it lighter in taste, very fresh! the clove comes back in the aftertaste! the empty glass next to it gives a lovely smell!
    I love it!
