This Cane Island bottled rum was column distilled in the Dominican Republic at Alcoholes Finos Dominicanos.
It has been aged in the distillery's tropical climate, in American white oak barrels, for 5 years.
Nico's tasting notes
The nose is greedy, covered with buttery caramel and a very light layer of roasting. The latter gains in thickness and breadth as time goes by, and begins to develop nuances of roasted nuts.
Aeration reinforces this sensation of gourmet roasting, and the burnt oak releases its spiciest aromas. Sweet spices, of course, mixed with a fine grinding of hazelnuts and coffee.
The palate is soft and round, with a gourmet woodiness full of coconut milk and vanilla. All this is framed by toasty, even quite strongly toasted oak, quite balanced by a mellow, even sweet character.
The finish is well-rounded, with a soft woodiness garnished with roasted nuts.
