Chamarel Exotic Spices is first and foremost an agricultural rum column-distilled from sugar cane grown on the Chamarel estate, and aged in French oak barrels in the distillery's cellars for 18 months. Natural spices (including cinnamon) are then slowly macerated for a further 6 months.
Nico's tasting notes
In brief: exotic - vegetal - fine spices - rhum agricole - complex
On the nose, this is a rather original spiced that doesn't play on the usual range of Christmas spices. Its aroma transports us to a fruit market or tropical orchard, with all the fiery exoticism that implies. The fruit is very ripe, as in a heavy, aroma-laden rum.
With a little air, more complex, almost medicinal, camphor notes emerge. The nose is pleasantly fragrant, vegetal and round, always complex, with a spicy veil of incense.
On the palate, it's the rum that first alerts our senses. The cane is perfumed with tobacco, with a slight bitterness of lime zest and a characteristic pepperiness. The spicy side is expressed through very dark cocoa, followed by the herbaceous aspect of dried herbs.
The finish is very exotic but also complex, with very ripe exotic fruits, cane and rare spices.
"This original and sophisticated spiced rum will be an elegant ingredient for refined cocktails..."
