This edition of Clairin Casimir was distilled in 2021 by the Haitian micro-distillery Faubert Casimir.
Located in Baradères, on the Caribbean coast, this family-run distillery produces clairin from the Hawaii cane variety.
Fresh sugarcane juice is fermented with wild yeast. During this stage, wild anise, ginger and lemongrass are added to the open vats.
This unique process contributes greatly to the atypical aromatic profile of Casimir clairin.
Distillation takes place in an iron still heated over an open fire. This eau-de-vie has undergone no reduction prior to bottling.
