Clairin Casimir récolte 2021 is produced by the Haitian micro-distillery Faubert Casimir from pure cane juice. This artisanal, family-run distillery is located on the shores of the Antilles Sea, on the land of Baradères.
Here, rum made from fresh sugarcane juice is fermented with wild yeasts in open-air vats. Wild anise, ginger and lemongrass are added to these vats, resulting in a unique fermentation process.
This edition was distilled in 2021 in pot stills over an open flame by Faubert Casimir. It was bottled without any reduction, to preserve all its deliciousness. This clairin is therefore brut d'alambic.
