This "Le Rocher" clairin comes from the 2022 harvest. It is produced by the Bethel Romulus distillery in Pignon, a commune in Haiti.
When making this clairin, vinasse from previous distillations is added to 30% of the cane syrup during fermentation. After this important step, discontinuous distillation is carried out in a traditional pot still.
No reduction is made before bottling.
Jérémie's tasting notes
On the nose: It presents notes of lush flowers and ripe tropical fruits, leaning towards resin and oxidized red berries. A mineral touch is also perceptible. With time, notes of buttery cocoa emerge, evolving towards earthy notes.
On the palate: the attack is round and fruity, with some herbaceous and smoky notes. These aromas give way to a roasted, caramelized wood character before releasing notes reminiscent of peat.
The finish: We remain on the woody side, with notes of smoke and earthy notes.
An atypical but very interesting profile!
