Sajous clairin is produced at the Chelo distillery in the commune of Saint-Michel de l'Attalaye, in northern Haiti.
It is distilled from pure sugarcane juice of the "Cristalline" variety. This rather rare and ancient variety comes from a small plot of land farmed organically.
No chemicals or fertilizers are used in cultivation.
Fermentation is "spontaneous", meaning that no chemical yeast is added. This is followed by distillation in a pot still heated over an open fire under the supervision of Michel Sajous.
This crude distillation eau-de-vie has not been reduced prior to bottling.
