Flor de Caña 25 ans is a traditional rum made from sugar-rich molasses and distilled in columns. The rum is aged in the tropical climate in small casks that have previously held bourbon for 25 years. After such a long ageing period, the angels' share exceeds 85%.
Nico's tasting notes
In brief: toasted wood - nuts - maple syrup - coconut - salted butter caramel
The nose gives off alcohol vapors with fine notes of oxidized fruit. Toasted wood and roasted nuts are very dry, almost charcoal-like. The woodiness is also spicy and fragrant, like cedar wood. The maple syrup is both caramelized and woody, and then a little freshness takes us by surprise. It seems to come from the coconut and its slightly milky water, leading us towards something creamier, like vanilla crème brûlée or butterscotch.
The palate is smooth, well-balanced and tasty. The caramel is rich, leaning more towards its Breton version with salted butter. Molasses covers wood that seems more fragile than on the nose, while cocoa and coffee are reminiscent of Irish Coffee, renamed Caribbean Coffee for the occasion.
On the finish, coffee, liquorice and cocoa linger, with a hint of vanilla at the very end.

Contrary to what it says, I didn't receive a 5cl sample but my order for a bottle of Flor de Cana 25 ans. A magnificent tasting rum which is one of my favorites.
