Habitation Velier Privateer White 62°: Description and customer reviews

Habitation Velier Privateer White is the first rum from the United States to be bottled by Velier. This New England Rum is a tribute to the "privateers" who fought in the American Revolution, when New England was a major hub for world rum.

The distillery has set up its pot-stills in Ipswich, Massachusetts, to produce Pure Single Rums from a unique molasses. The molasses comes from a single farm in Guatemala, and its low degree of refining makes it similar to battery syrup.

Fermentation for this cuvée took place in two phases. The first, where the alcohol is formed, was carried out using 3 different strains of yeast. This is followed by a secondary fermentation, during which wild yeasts develop further aromas.

Batch distillation takes place first in a Vendôme pot-still, then in a Christian Carl alembic.
