Paranubes Cana Morada 54.5°: Description and customer reviews

Paranubes Caña Morada is a rum distilled from the juice of a single variety of sugar cane, making it a single-varietal rum.
It is a limited series produced in the Mexican state of Oaxaca.

The Morada variety of cane was harvested and then hand-pressed. The juice was then fermented with wild yeasts in pine vats.
The fermented cane juice was then distilled in a still with a copper column consisting of 6 plates.

Nico's tasting notes

The nose is filled with a huge, overwhelming cane, screaming with naturalness and generosity. All the essence of sugar cane is there, fresh and sweet, concentrated and powerful. The juice is lightly cooked, acquiring nuances of raw sugar and licorice.

With aeration, we rediscover Paranubes' trademark vegetal side, which takes on color and goes so far as to verge on sweet tomato and even ketchup. This characteristic ties in perfectly with the cane, which takes on an intoxicatingly velvety air, with accents of sage.

The palate is round and vegetal, in perfect harmony with the nose. It's a pleasure to rediscover our beautiful cane au naturel, softly herbaceous and lightly cooked. Its concentrated juice is full of chlorophyll, sweet pepper, resin and sugar. The notes of fermentation are just right, discreet and simply enhance the aromatic profile.

The finish is long and flavorful, with gray pepper and a hint of olive on the long finish.
