Providence First Drops 2019 57°: Description and customer reviews

Providence First Drops 2019 is the first rum from Distillerie de Port-au-Prince. This very first batch was distilled in November 2019, and is the culmination of a dream for Luca Gargano. The distillery was set up with fellow distiller Gianni Capovilla and a Haitian family.

After slow fermentation, this rum made from pure juice and Cristalline cane syrup is distilled in a Muller iron still. From a technical point of view, this is a fairly concentrated rum. It contains 538.9 g/hlpa of aromatic congeners, including 212.2 g/hlpa of esters.

Given its rarity, and so that as many connoisseurs as possible can taste it, this rum is only available in 5cl samples, limited to one per customer.

Nico's tasting notes

The nose is a concentrate of cane, with no explosiveness, but rather a kind of restrained tension. This cane opens quickly, like the petals of a flower. We think of heavy, velvety petals, which then unfurl thick, deep aromas.

Aeration opens the way to an all-chocolate, creamy sweetness, very enveloping. The cane is candied, but at the same time more expressive than in the first moments. It's the sweetness that wants to express itself, enveloping all the cane's vegetal and fruity aromas.

On the palate, there's a kinship with the wild spirit of Haitian clairins. After a very rounded entry, we enter a humid, tropical atmosphere that plunges the palate into a kind of languorous torpor. The cane sugar flavors that follow give us a superb snapshot of authenticity, with rustic sugar still full of molasses. The cane is at once as tender as an iced chestnut, and as vibrant as green, spicy, dew-freshened aromatics and tall herbs.

The finish continues the deliciousness of marron glacé and milk chocolate, leaving just a hint of lime zest on the finish.
