The La Favorite distillery is one of the two smallest in Martinique, along with Neisson .
Located very close to Fort-de-France and owned by the Dormoy family, it is the only one that has truly escaped the control of large financial groups over the island's distilleries.
It was Franck Dormoy, very welcoming and accessible, who showed us around the estate and provided us with lots of information.
We recommend you visit their website. You will find very detailed explanations on the production of La Favorite rum: http://www.rhum-lafavorite.com/

Maintenance of cane crushers shortly before harvest and start of production
Production of steam providing energy to the crushers and distillation columns

Franck Dormoy, in the middle of the aging barrels: we can clearly see the “artisanal” side of the distillery here. Nothing to do with the well-ordered barrels of the large distilleries on the island.
