Nico's tasting notes
On the nose, a very ripe, even candied cane reaches out to us, in a very natural, vegetal breath. It expresses both fresh, green aromas like herbs, and a certain roundness of raw cane sugar.
Aeration reveals a concentrated cachaça, made from ever more candied cane, to the point of being sticky. Its spicy bark comes through a little more, and adds to the aromatic notes, which also increase in intensity.
On the palate, the cane is lively and vegetal, and also knows how to charm us with a very well-balanced touch, round but in no way sacrificing its intensity. It's the cane that takes charge when it comes to character, exposing its solid, peppery bark. Then we find our herbs, which have matured well and are even beginning to blacken.
The finish offers lingering cane notes, a hint of fermentation, and an impression of a terroir product.
