In addition to rum, the Alma distillery located in Modica in south-eastern Sicily also produces a London dry gin.
This gin benefits from a slow re-distillation in a small 100 liter copper still. This re-distillation is done after a 12 hour maceration with many botanicals in a grain alcohol.
The bouquet is composed of citrus fruits, thyme, rosemary, broom, local almonds and of course juniper berries. The “Mater” touch comes from Panela, a type of cane honey obtained by evaporating fresh cane juice.
