The 2021 Providence 3-year-old cuvée represents the third official bottling of aged rum from this brand launched in 2019.
This rum is produced in Port-au-Prince, Haiti. It is born from a collaboration between La Maison & Velier, local partners and the Linge family.
The particularity of Providence rum lies in its traditional production. It is produced from a single variety of cane. This is the Cristalline cane grown on the land of Michel Sajous in Saint-Michel-de-l'Attalaye.
Fermentation is carried out with selected yeasts and vinasses from previous distillations. This process allows for a particular aromatic complexity. As for discontinuous distillation, it is carried out in a Müller pot still.
This new version, which follows the 2019 and 2020 editions, is made from a blend of old barrels. These previously contained bourbon, Providence rum, and even Caroni rum.
