A 1710 La perle fine 2021: Description and customer reviews

A 1710 La perle fine 2021 is the second vintage of this raw distilled rum, produced in Martinique at the Habitation du Simon. It is made from sugar cane cut by hand on the plots of Madame Joseph Sylvestre and Monsieur Paul Octave, Ducos and Saint-Esprit.

The canes are only pressed once and the vesou ferments for a long time, 5 to 7 days. It is then double distilled several days apart, in the copper still nicknamed La Belle Aline. The pure cane juice rum is bottled on site at its natural strength.

Nico's tasting notes

On the nose , the cane is powerful and clean, it goes straight and concentrates in a single point. In the line of sight, a heart of citrus peels decorated with their leaves, coated in a herbaceous syrup rich in sugar.

Aeration gives the rum a little breathing space, which relaxes into a more velvety, but also greener, profile. We then visualize the concentrated cane juice flowing drop by drop from the still, hot and oily, full of gently vegetable essences.

The mouthfeel is both warm and melting, with a texture that curbs its greasy and oily side. We thus remain in a sort of righteousness, of clarity, which accords perfectly with the spirit which had been built up in the nose. Balance is once again the key word, with this limpid cane but with deep accents developed during fermentation.

The finish is dry and clear, with some aromatics introducing themselves with their herbaceous and almost resinous flavors.
