The majority of agricultural rums come from continuous distillation columns. In the past, tasting rum from the column was a privilege reserved for the distillery's staff or distinguished guests. But now, more and more producers are doing us the honor of being able to taste it. These bruts de colonne are collected at the end of the distillation process. They are often left to rest for a few months to round out and soften. They are a unique opportunity to discover the identity of a distillery, the backbone of a rum, well before tasting its barrel-aged version.
