Big Mama 12 ans Porto is a rum from Demerara, a region with many legends. This part of Guyana was once one of the nerve centers of the rum industry, but today almost all its distilleries have disappeared. Fortunately, the stills have been preserved at Diamond Distillery, the source of this rum.
This molasses rum was distilled in 2005. It was aged for more than 11 years, then matured in barrels of port, the famous Portuguese mutated wine. It is therefore 12 years old.
Nico's tasting notes
On the nose, we find a lovely molasses rum with a typically English character, full-bodied and strongly influenced by oak. Caramelized, vanilla-flavored nuts carry a slightly powdery, cocoa-like edge, which opens up to more spice.
Aeration further opens up the wood fibers, from which the rum draws aromas of vanilla, coconut and tobacco. The port side, or rather the port cask side, is characterized by fruity, fresh, resinous tannins.
The palate is soft and very fluid, with a completely clement attack that gives the impression of a tempered rum, lukewarm as a summer evening. The American oak barrel speaks first, while vanilla and coconut echo the ambient sweetness, before the port barrel tightens the taste buds a little on some green tannins.
The finish is light and caramelized, with hints of toasted nuts.
