Bayou spiced is distilled from a blend of unrefined cane sugar and molasses called "sugar house". Its creators then macerate a blend of Creole spices, along with a secret ingredient typical of Louisiana.

A rum for cocktails, it's very smooth but its spices make it very funky.

Nico's tasting notes

The nose is balanced and nuanced compared to most other spiced. We find the ripe exotic fruits of the classic version, notably dried banana, with a little extra cinnamon and pepper.

Aeration brings out the spices and roundness. The syrup is clearly dominated by cinnamon, with nutmeg and vanilla also in mind.

The palate is spicy, tangy and very candied. There's a sweetness we hadn't suspected on the nose, like a red-fruit gum. The spices warm the taste buds, especially the pepper, for a contrasting Dr Pepper-like ambience.

The finish is greedy and fruity, with very ripe banana and a reasonably smooth texture.
