This white rum from Clément is distilled from a single variety of cane, cane bleue. It was harvested in 2016.

Another special feature of this rum is its slow reduction, which takes place over 6 months (brewing and aeration).

Canne Bleue rum is a limited edition, produced in small quantities every year since 2000! For this 17th edition, this "3D" bottle is particularly successful. This modern work of art echoes the Clément Foundation, which promotes contemporary Caribbean art (those lucky enough to have visited the Clément winery in Martinique won't have missed it).

Nico's tasting notes

On the nose, this purely Martinique white rum captures the breeze of the Atlantic coast. Lime zest and pepper are enhanced by a touch of iodine and minerals. The cane first shows its bark, then its still-moist bagasse, which begins to ferment. A touch of cane sugar later, and it's as if the ti'punch is already ready.

Aeration flushes out the salt from the cane stalks, the temperature rises and a herbaceous side begins to transpire. Fermentation notes balance with pepper, giving the rum a simple, straightforward appearance.

The palate is firm, and reflects the dry, rustic, earthy character of the cane. Still in an unmistakably Martinican style, pepper joins bagasse to add wood to the boiler and continue to assert the rum's character. The bitterness of lime zest, or even combava, comes in at just the right moment to deliver its dose of exoticism.

The finish is rather long and very balanced. It is 100% focused on the cane, with a striking naturalness.
