Neisson Clos Godinot is Grégory Vernant's first plot-based rum.
Clos Godinot is a sugarcane plantation in Le Carbet. It culminates at an altitude of 245 meters, and is very steep (around 35 degrees). It benefits from plenty of sunshine and fluctuating temperatures, enabling us to harvest cane with a very high sugar content (brix). Brix is 27, while the average for Martinique is around 18.
Distillation takes place in the legendary Savalle column, after the fresh cane juice has fermented for 4 to 5 days. This is a long fermentation for an agricultural rum, as this is the limit allowed by the AOC Martinique.
