Chichibu
Chichibu is a recent Japanese distillery, opened in 2007 by Ichiro Akuto.
Grain and peat are mainly imported (for the moment), fermentation tanks are made from Japanese oak (mizunara) and Chichibu uses two Forsyth's iron stills.
In addition, Ichiro Akuto does not neglect maturation and experiments with mizunara, French wine and port barrels...
At present, the distillery manages two whisky brands: Chichibu, of course, and Ichiro's Malt.
Indeed,Ichiro Akuto's grandfather, Isouji, was the founder ofHanyu, a distillery founded in 1941 and closed in 2000. Chichibu therefore stores the remainingHanyu casks.
Ichiro's Malt regularly blends Chichibu and Hanyu. Examples includeIchiro's Malt Double Distilleries,Ichiro's Malt Wood Reserve,Ichiro's Malt Mizunara Wood,Ichiro's Malt Malt & Grain and the recent Ichiro's Malt World Blended Whisky (2018).
Finally, Chichibu's production is highlighted by various editions. We can mention Chichibu The First, Chichibu On The Way, Chichibu IPA and numerous vintage versions(Peated, Bourbon Barrel, Beer, Barrel, Single Cask) and even a Chichibu Paris Edition 2018. Read less
